The Best Blueberry Pancakes Recipe
Mmm, I could eat about a bajillion of these! It seems the secret is using buttermilk..
- 2 eggs, separated
- 1 1/2 cups sifted all-purpose flour
- 2 1/4 teaspoons baking powder
- 3 tablespoons white sugar
- 3/4 teaspoon salt
- 1/2 cup milk
- 1/2 cup tararua cultured buttermilk
- butter for the pan
- 1 cup fresh or frozen thawed blueberries, rinsed, cut in half so they go further!
- Other ideas to add to dry ingredients: Lemon Rind, Dessicated Coconut
In a small bowl, beat egg whites until stiff; set aside.
In a separate bowl, sift together flour, baking powder, sugar and salt. Beat egg yolks in a medium mixing bowl; add milk + buttermilk. Stir egg mixture into dry ingredients; mix until batter is smooth and stir in blueberries. Fold in beaten egg whites (keeps the air bubbles in whites). Cook on medium (30 secs 1st side, 15 other side) in pan
Makes 6 biggish pancakes
Serve with: Cinnamon Sugar, Vanilla Icecream, Maple Syrup, Feijoas, Bananas…

Ethical Hedonism
I’m an Ethical Hedonist.
Hearing the word ‘hedonism’, most people think of someone maximising sensory pleasure at all costs… but I like the wider definition that hedonism encompasses:
“By pleasure we mean the absence of pain in the body and of trouble in the soul.” - Epicurus (341-270 BC)
I also like the definition I found here:
“The belief that the pursuit of pleasure is good providing that it honors another’s pursuit of the same.”
I also get a great deal of pleasure from contributing to the happiness of others. More and more so as I get older. My pursuit of hedonism isn’t just about me.. because I’m happiest when everyone’s happy. ‘Get to the top and bring someone with you’ is something that my old Principal Phil Raffills used to say, and I think it’s a great way to live. It’s kind of like having your cake and eating it too.
